Chicken Biryani

Ingredients
- 500g basmati rice
- 750g chicken, cut into pieces
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 2 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 4-5 green cardamom pods
- 2-3 cinnamon sticks
- 4-5 cloves
- 1 bay leaf
- Fresh mint leaves
- Fresh coriander leaves
- Ghee or oil
- Salt to taste
Instructions
- Wash and soak basmati rice for 30 minutes.
- Marinate chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, red chili powder, and salt for 30 minutes.
- Heat ghee/oil in a pan, add whole spices (cardamom, cinnamon, cloves, bay leaf) and sauté until fragrant.
- Add onions and cook until golden brown.
- Add marinated chicken and cook for 15-20 minutes until tender.
- Cook rice with salt until 70% done, drain water.
- Layer the biryani: half rice, chicken masala, mint leaves, remaining rice.
- Cover and cook on low heat for 20-25 minutes (dum cooking).
- Garnish with fresh coriander and serve hot with raita.
