Chole Bhature

Ingredients
- For Chole (Chickpea Curry):
- 2 cups chickpeas (soaked overnight)
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 2 tbsp ginger-garlic paste
- 2 tsp chole masala
- 1 tsp garam masala
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 2 tbsp oil
- Salt to taste
- For Bhature:
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1 tsp baking powder
- 1 tsp sugar
- Salt to taste
- Oil for deep frying
Instructions
- For Chole: Pressure cook soaked chickpeas with salt until tender.
- Heat oil in a pan, add onions and cook until golden brown.
- Add ginger-garlic paste and cook for 2 minutes.
- Add tomato puree and all spices, cook until oil separates.
- Add cooked chickpeas and simmer for 10-15 minutes.
- For Bhature: Mix flour, yogurt, baking powder, sugar, and salt.
- Knead into a soft dough and let it rest for 2 hours.
- Divide dough into balls and roll into circles.
- Deep fry until golden and puffed up.
- Serve hot bhature with chole, onion rings, and pickle.
