Masala Dosa

Ingredients
- For Dosa Batter:
- 2 cups rice
- 1 cup urad dal (black gram)
- 1/2 tsp fenugreek seeds
- Salt to taste
- For Potato Masala:
- 4 medium potatoes, boiled and cubed
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Curry leaves
- 2 tbsp oil
- Salt to taste
- For Serving:
- Sambar
- Coconut chutney
Instructions
- For Dosa Batter: Soak rice, urad dal, and fenugreek seeds separately for 6 hours.
- Grind urad dal to a smooth paste, then grind rice to a coarse paste.
- Mix both pastes, add salt, and let ferment overnight.
- For Potato Masala: Heat oil, add mustard seeds and curry leaves.
- Add onions and green chilies, sauté until translucent.
- Add turmeric, red chili powder, and boiled potatoes.
- Mix well and cook for 5 minutes.
- For Dosa: Heat a griddle, pour batter in circular motion.
- Spread potato masala in the center when dosa is half-cooked.
- Fold dosa and serve hot with sambar and chutney.
