  1. For Dosa Batter: Soak rice, urad dal, and fenugreek seeds separately for 6 hours.
  2. Grind urad dal to a smooth paste, then grind rice to a coarse paste.
  3. Mix both pastes, add salt, and let ferment overnight.
  4. For Potato Masala: Heat oil, add mustard seeds and curry leaves.
  5. Add onions and green chilies, sauté until translucent.
  6. Add turmeric, red chili powder, and boiled potatoes.
  7. Mix well and cook for 5 minutes.
  8. For Dosa: Heat a griddle, pour batter in circular motion.
  9. Spread potato masala in the center when dosa is half-cooked.
  10. Fold dosa and serve hot with sambar and chutney.
